Pork Belly Wrapped Enoki
It is really hard to find this recipe with pork belly instead of nasty greasy American bacon. So I decided to write my own recipe.
12 slices of pork belly, halved crosswise
Two 4-ounce packages enoki mushrooms, trimmed and split into 24 bundles
Bamboo Skewer Sticks
1. Preheat the oven to 425°.
2. Wash the enoki in cold water.
3. Wrap the pork belly three times tightly around the enoki.
4. Roast the enoki bundles for 20 minutes, or until the bacon is browned and crisp. Drain the bundles on paper towels, remove the toothpicks and serve.
