Roasted Garlic Dressing (From How It All Vegan! By Tanya Barnard and Sarah Kramer)

10-12 Cloves of garlic
1 cup flax oil/0.5 cup olive oil
1/2 cup balsamic vinegar
1/2 cup water
1 tsp salt
1/2 tbsp pepper
1tbsp Dijon mustard

Roast garlic (http://thepioneerwoman.com/cooking/2008/05/how-toroast-garlic/) Set aside and peel garlic when cool. In a blender or food processor, blend together the garlic oil, vinegar, water, salt, pepper, and mustard until smooth.

Notes: I had to add 2x amount of garlic.
Maybe I have the wrong Dijon mustard? Only bought store brand.
Added sugar to taste
